Wynn Las Vegas Announces F&B Changes

At Wynn Las Vegas, Luke Palladino (l.) was named Sinatra executive chef, replacing eight-year head chef Theo Schoenegger. The Country Club steakhouse will close January 14 to make room for the $1.5 billion Paradise Park. Country Club Chef Rene Lenger will move to Tableau and current Tableau Executive Chef David Middleton will move to Lakeside.

Wynn Las Vegas recently announced several food-and-beverage changes. Luke Palladino has been named executive chef at the Italian restaurant Sinatra. Most recently, he managed the kitchen at Salute Trattoria Italiana at Red Rock Resort, which will close in early December. Palladino, who will replace eight-year Sinatra veteran Theo Schoenegger, said he will put his own “twist on classic Italian dishes, while continuing to pay homage to Ol’ Blue Eyes.”

In addition, the American steakhouse Country Club will close following brunch on Sunday, January 14 to prepare for construction of Wynn’s Paradise Park, the $1.5 billion, 140-acre lagoon, water sports facility, convention and hotel surrounded by sand beaches. Country Club Chef Rene Lenger will take over at Tableau. Current Tableau executive chef David Middleton will take over as chef de cuisine under David Walzog at Lakeside.

Finally, master mixologist Andrew Pollard, formerly a beverage development specialist with Breakthru Beverage Nevada, will become assistant director of beverage development, overseeing the cocktail menu development at all of the resort’s food and beverage outlets.
