Pedroza, Vilsant Join Downtown Grand Las Vegas

Two veterans of the hospitality industry have joined the team at the Downtown Grand Las Vegas. Cinthia Pedroza is coming from the Four Seasons, and Max Vilsaint from the Westin Lake Las Vegas.

Hotel industry veteran Cinthia Pedroza has joined the Downtown Grand Las Vegas Hotel & Casino as food and beverage operations manager. Pedroza has extensive experience in room service, restaurant management and beverage operations. Most recently, she served as food and beverage manager at the Four Seasons Las Vegas.

At the Downtown Grand, Pedroza will oversee operations and staff at the property’s restaurants including Stewart & Ogden; Chinese restaurant Red Mansion; the Triple George Grill steakhouse; and Picnic, the property’s rooftop pool bar/restaurant. Pedroza will also oversee the property’s the Grand Parlour, a special event space that can accommodate up to 200 guests for private functions.

Max Vilsaint, Jr. has been named director of facilities at the property. Previously, Vilsaint was director of engineering at the Westin Lake Las Vegas. He has served in that position for several hotels and casinos during his career, according to a statement from the company.

Vilsaint is a credentialed green associate in the U.S. Green Building Council’s LEED program, and a certified engineering operations executive and certified hospitality facilities executive with the American Hotel & Lodging Association.
